Ingredients

  • 400 g 400 M&J Lightly Seasoned Chicken

  • 3 3 egg yolks

  • 1 Tbsp 1 mustard

  • 3 3 -4 anchovies

  • 2 2 garlic cloves

  • 2 tsp 2 capers

  • 1/2 tsp 1/2 salt

  • 1/4 tsp 1/4 pepper

  • 3/4 cup 3/4 neutral flavour oil

  • Juice of 1 lemon

  • 1 1 -2Tbsp warm water

  • 1 cup 1 parmesan cheese plus extra for topping

  • 1 1 -2 baby cos lettuce

  • 1 cup 1 croutons

  • 1/2 cup 1/2 roughly chopped cooked bacon

Method

  • Place egg yolks, mustard, anchovies, garlic, capers, salt and pepper into a food processor and blitz until thickens (around 1min).
  • Slowly start adding oil while blitzing. 
  • Once finished, add lemon juice and parmesan, blitz and slowly add warm water until desired consistency.
  • Slightly warm up chicken then slice into 1cm pieces.
  • Arrange salad by adding layers of lettuce, croutons, bacon, chicken and dressing. Top with extra parmesan and enjoy.
