Ingredients

  • 4 small 4 chicken tenderloins

  • 2 tsp 2 kecap manis sweet soy

  • 1 tsp 1 extra virgin olive oil

  • 8 large 8 slices square-shaped wholemeal bread, crusts removed

  • 2 Tbsp 2 kewpie mayonnaise, plus extra

  • 2 sheets 2 nori, quartered

  • 2 2 baby cucumbers, quartered

  • ½ ½ avocado, thinly sliced

Method

  • Toss chicken in kecap manis and set aside to marinate for 30 minutes.
  • Heat oil in a small frying pan over medium heat. Add chicken and cook for about 8 minutes, turning or until cooked through. Remove from pan and set aside to cool.
  • Use a rolling pin to flatten bread slices. Spread bread with mayonnaise, then top with nori. Slice chicken in half then divide chicken, cucumber and avocado among bread slices and squeeze a little extra mayonnaise down the opposite side, as the glue. Roll up tightly to enclose.
  • Use a serrated knife to cut each roll into three bite-size pieces, or leave them whole if desired, then pack into lunchboxes.
