Festive Watermelon Salad with Rosewater-Pickled Golden Raisins

Ingredients

  • Watermelon salad
  • 1/2 1/2 smal watermelon, cut into triangles

  • 1 cup 1 chopped cucumber

  • 1/2 1/2 bunch fresh mint

  • 1/3 cup 1/3 dill sprigs

  • 1/4 1/4 medium red onion, thinly sliced

  • Juice of 1 lemon

  • 2 Tbsp 2 extra virgin olive oil

  • 1 tsp 1 ground sumac

  • 1/2 cup 1/2 Persian feta

  • 1/4 cup 1/4 (40g) toasted pine nuts

  • Salt and freshly ground pepper, to taste

  • Rosewater-pickled raisins
  • 1/2 cup 1/2 (90g) golden raisins

  • 1 Tbsp 1 rosewater

  • 2 Tbsp 2 white wine vinegar

Method

  • For rosewater-pickled raisins, add golden raisins, rosewater and white wine vinegar to a vacuum sealer bag. Set vacuum suction and seal to level 3. Let sit for at least 15 minutes (or up to 2 hours) to allow flavours to infuse.
  • To assemble watermelon salad, combine watermelon, cucumber, mint, dill and red onion in a large bowl. Drain raisins and add to salad.
  • Whisk together lemon juice, olive oil and sumac and season with salt and pepper. Drizzle dressing over the salad and toss gently. Top with Persian feta and pine nuts.
