AIR FRYER CHOCOLATE CHIP MUFFINS

1 cup 1 plain flour
1/2 cup 1/2 caster sugar
1/2 tsp 1/2 baking powder
1/2 cup 1/2 Greek-style natural yoghurt
1/4 cup 1/4 light-in-flavour extra virgin olive oil
1 1 free range extra-large egg
3 Tbsp 3 milk
1 tsp 1 vanilla essence
4 Tbsp 4 chocolate chips
Method
- In a large bowl combine flour, sugar and baking powder.
- Make a well in centre and add yoghurt, oil, egg, milk and vanilla, stirring until just combined. Fold in 2 Tbsp of chocolate chips.
- Preheat air fryer on 160°C for 5 minutes.
- Meanwhile, line 9 silicone muffin cases with paper cases. Evenly fill each case with about 2 Tbsp batter.
- Arrange in air fryer basket, in a single layer – depending on the capacity of your air fryer you may need to cook them in two batches.
- Air fry for 15 minutes or until muffins are golden brown and cooked through when skewer inserted into centre comes out clean.
- Open air fryer basket and allow muffins to cool for 5 minutes until they are cool enough to handle, then transfer to a rack. Cool for an extra 15 minutes to enjoy warm, or set aside to cool completely and enjoy at room temperature.
