Ingredients

  • 1 cup 1 plain flour

  • 1/2 cup 1/2 caster sugar

  • 1/2 tsp 1/2 baking powder

  • 1/2 cup 1/2 Greek-style natural yoghurt

  • 1/4 cup 1/4 light-in-flavour extra virgin olive oil

  • 1 1 free range extra-large egg

  • 3 Tbsp 3 milk

  • 1 tsp 1 vanilla essence

  • 4 Tbsp 4 chocolate chips

Method

  • In a large bowl combine flour, sugar and baking powder.
  • Make a well in centre and add yoghurt, oil, egg, milk and vanilla, stirring until just combined. Fold in 2 Tbsp of chocolate chips.
  • Preheat air fryer on 160°C for 5 minutes.
  • Meanwhile, line 9 silicone muffin cases with paper cases. Evenly fill each case with about 2 Tbsp batter.
  • Arrange in air fryer basket, in a single layer – depending on the capacity of your air fryer you may need to cook them in two batches.
  • Air fry for 15 minutes or until muffins are golden brown and cooked through when skewer inserted into centre comes out clean.
  • Open air fryer basket and allow muffins to cool for 5 minutes until they are cool enough to handle, then transfer to a rack. Cool for an extra 15 minutes to enjoy warm, or set aside to cool completely and enjoy at room temperature.
