2 Tbsp 2 lime juice
1/4 tsp 1/4 finely grated lime zest
3 tsp 3 white tequila
1 Tbsp 1 finely chopped coriander
1/2 tsp 1/2 caster sugar
Pinch sea salt
Finely diced avocado, finger lime vessels, small coriander leaves and lime wedges, to serve
Method
- To make a dressing, whisk lime juice and zest, tequila, coriander, sugar and salt in a small bowl. Drizzle dressing over 8 oysters. Top each with avocado, finger lime vessels and a coriander leaf.
- Arrange on a serving platter lined with crushed ice and serve with lime wedges.
