Ingredients

  • 1 and 1/3 cups 1 and 1/3 Babushka’s Coconut Kefir

  • 2 cups 2 self raising flour

  • 1 tsp 1 baking powder

  • 1/2 cup 1/2 raw sugar

  • 1 cup 1 desiccated coconut

  • 1/4 cup 1/4 olive oil

  • 2 large 2 bananas, mashed

  • 1 tablespoon 1 pepita and sunflower seed mix

  • 1 teaspoon 1 sesame seeds

  • Cream cheese frosting (optional)
  • 200 grams 200 cream cheese, chopped

  • 1/2 cup 1/2 icing sugar

  • Small chocolate Easter eggs to decorate

  • Butter, to serve

Method

  • Preheat oven to 180°C. Grease and line 6cm deep, 10cmx21cm (base) loaf pan.
  • Sift flour and baking powder into a large bowl. Stir in sugar and coconut in a bowl. Make a well in the centre. Add the oil, coconut kefir and banana. Stir gently until combined. Spoon mixture into the loaf pan and smooth the surface.
  • Combine the seed mix and sesame seeds and sprinkle over the banana bread, Bake for 50-60 minutes or until a skewer inserted in the centre comes out clean. Cool 5 minutes then lift onto a wire rack. Slice and serve toasted with butter.
  • Easter option
  • For the frosting, beat the cream cheese in a bowl until smooth. Add icing sugar, a spoon at a time, beating until smooth. Spread over the banana bread. Top with easter eggs.
