Babushka’s Kefir, Potato and Salmon Slice

Ingredients
500 g 500 baby potatoes, skin on
200 g 200 smoked salmon roughly chopped
6 6 eggs
250 g 250 (1 cup) Babushkas Organic or Natural Kefir
50 g 50 (1/3 cup) self-raising flour
2 tbsp 2 chopped fresh dill
200 g 200 feta cheese crumbled
Salt and pepper to taste
Baby spinach, roasted cherry tomatoes on vine, to serve
Method
- Par boil potatoes until just tender. Allow to cool and cut into 1cm slices.
- Preheat oven to 190°C/170°C. Grease a 26cm x 20cm x 5cm rectangle baking pan and line with baking paper
- Arrange half of the potatoes over the base of the pan in a single layer, lay half the salmon on top and scatter with half crumbled feta and half the dill.
- Whisk eggs, kefir and flour in a large jug and pour half the mixture over potatoes. Repeat layers. Bake for 30-35 minutes or until set.
- Cut into pieces, serve with roasted cherry tomatoes and dressed spinach leaves.
