Roasted chicken thighs with tomatoes and garlic

You’ll find this a very simple yet also a very flavourful dish with juicy chicken and caramelised tomatoes giving you an unexpected pleasure to serve up. And it looks so good!

Ingredients

  • 4 4 bone-in, skin-on chicken thighs

  • Salt and black pepper, to taste

  • 2 Tbsp 2 olive oil

  • 3 cloves 3 garlic, minced

  • 200 g 200 cherry tomatoes, halved

  • 1 tsp 1 dried thyme

  • 1 tsp 1 dried oregano

  • 1 1 ⁄2 cup chicken stock

  • 2 Tbsp 2 Balsamic vinegar

Method

  • Preheat oven to 200°C. Season chicken with salt and pepper.
  • Heat olive oil in oven-safe pan. Sear chicken thighs skin-side down until golden brown, about 5 minutes.
  • Flip chicken, then add garlic, tomatoes, thyme and oregano. Pour in chicken stock and Balsamic vinegar.
  • Transfer to oven and roast for 25-30 minutes, or until chicken is cooked through.
  • Serve hot with mashed potatoes or crusty bread.
