Tilda kimchi fried rice

1 1 pouch Tilda Long Grain Rice
2 Tbsp 2 vegetable oil
1 1 onion, finely chopped
1 clove 1 garlic, crushed
1 tsp 1 freshly grated ginger
50 g 50 kimchi, drained
3 Tbsp 3 soy sauce
2 2 eggs
1 1 spring onion, finely sliced
Method
- In large pan, heat 1 Tbsp of oil and gently fry onion, garlic and ginger for a few minutes until softened. Add drained kimchi and heat for couple more minutes.
- Heat rice in microwave for 1 minute, then add to kimchi mix.
- Drizzle in soy sauce and mix in well. Keep warm.
- Fry eggs in remaining oil for few minutes to suit your preference.
- Divide kimchi rice between two bowls and top each with fried egg and sprinkle of spring onion.
