Ingredients

  • 2 cups 2 self-raising flour

  • 1/2 cup 1/2 brown sugar

  • 1 tsp 1 cinnamon

  • 2 2 ripe bananas, mashed

  • 1 cup 1 chopped strawberries

  • 2 2 eggs

  • 3/4 cup 3/4 milk

  • 1/2 cup 1/2 vegetable oil or light olive oil

  • 1 tsp 1 vanilla extract

Method

  • Preheat oven to 180°C. Line muffin tin with paper cases or grease.
  • In bowl, mix flour, sugar and cinnamon. Stir in mashed banana and strawberries.
  • In another bowl, whisk eggs, milk, oil and vanilla.
  • Combine wet and dry ingredients, mixing gently.
  • Spoon into muffin tin (showing strawberries). Bake for 20-25 minutes.
  • Let them cool (if you can resist) and enjoy!
