Ingredients

  • 2 cups 2 (300g) self-raising flour

  • 1/2 tsp 1/2 baking powder

  • 1/2 tsp 1/2 salt

  • 1/4 tsp 1/4 nutmeg (optional)

  • 1 cup 1 (250ml) milk

  • 2 2 eggs

  • 1/4 cup 1/4 (60ml) olive oil

  • 1 cup 1 (120g) sweet potato, cooked and mashed

  • 1 cup 1 (80g) fresh spinach, chopped

  • 1/2 cup 1/2 (80g) crumbled feta

Method

  • Preheat oven to 180°C. Line muffin tin with paper cases or grease.
  • Mix flour, baking powder, salt and nutmeg in a large bowl.
  • In another bowl, whisk milk, eggs and olive oil.
  • Fold wet ingredients into dry, then stir in sweet potato, spinach and feta.
  • Spoon into muffin tin and bake for 20-22 minutes.
  • Cool slightly and enjoy warm.
