Spinach, Sweet Potato and Feta Muffins

2 cups 2 (300g) self-raising flour
1/2 tsp 1/2 baking powder
1/2 tsp 1/2 salt
1/4 tsp 1/4 nutmeg (optional)
1 cup 1 (250ml) milk
2 2 eggs
1/4 cup 1/4 (60ml) olive oil
1 cup 1 (120g) sweet potato, cooked and mashed
1 cup 1 (80g) fresh spinach, chopped
1/2 cup 1/2 (80g) crumbled feta
Method
- Preheat oven to 180°C. Line muffin tin with paper cases or grease.
- Mix flour, baking powder, salt and nutmeg in a large bowl.
- In another bowl, whisk milk, eggs and olive oil.
- Fold wet ingredients into dry, then stir in sweet potato, spinach and feta.
- Spoon into muffin tin and bake for 20-22 minutes.
- Cool slightly and enjoy warm.
