Organic Probiotic Kefir Pancakes

1 1/2 cups 1 1/2 (375ml) Babushka Organic Natural Kefir
2 cups 2 (300g) organic plain flour
5 tsp 5 baking powder
1/2 teaspoon 1/2 ground cinnamon
1 tablespoon 1 organic protein powder, optional
2 tablespoons 2 raw sugar
2 2 organic eggs
1/4 cup 1/4 (60ml) chilled soda water
50 g 50 organic butter, melted
Berries, chopped toasted pistachios, organic honey, to serve
Extra Babushka Organic Natural Kefir and ground cinnamon, to serve
Method
- Sift the flour, baking powder, cinnamon and protein powder together in a bowl. Stir in the sugar. Make a well in the centre of the bowl.
- Whisk the egg and kefir together. Add to the bowl, stir until the batter is combined and lump free. Stir in the soda and 1 tablespoon of the melted butter.
- Heat a nonstick frying pan over medium heat. Brush the pan with a little of the remaining butter, then using paper towel, wipe over the pan to remove most of the butter (see tip below).
- Pour heaped 1/4 cup batter into the centre of the pan, lightly spread the batter into 10cm round. Cook 2 minutes or until you see bubbles on the surface. Carefully turn and cook a further 2 minutes until golden. Remove to a plate, cover with a clean tea towel, keep warm in a low oven while cooking the remaining pancakes.
- Serve topped with berries, pistachios, honey and a good drizzle of kefir with cinnamon sprinkled on top.

Tip: Excess butter in the pan will burn and causes the surface of the pancakes to become too dark before cooked, burnt butter also taints the taste of the pancakes. If you have ghee at home, its great as it wont burn when cooking pancakes.
