Oatmeal kiwifruit breakfast cups

Ingredients

  • 1 1 banana

  • 1 1/2 cups 1 1/2 rolled oats

  • 1/2 cup 1/2 peanut butter

  • 3/4 cup 3/4 plain yoghurt

  • 2 2 NutriKiwi, peeled and sliced

  • Desiccated coconut for decorating cups

Method

  • In mixing bowl, mash banana. Add rolled oats and peanut butter. Mix ingredients together until mixture is sticky.
  • Prepare muffin tin with liners. Scoop Tbsps of mixture and form into balls. Place each ball into one liner and press down firmly to make dent in centre of each cup to carry mixture.
  • Add yoghurt to each cup and top with kiwifruit slices. Sprinkle with desiccated coconut.
  • Serve and enjoy!
