Lemon garlic chicken with roasted potatoes

4 4 chicken drumsticks
2 2 chicken breasts, halved
3 Tbsp 3 olive oil
1 tsp 1 salt
½ tsp black pepper
1 tsp 1 smoked paprika
1 tsp 1 dried oregano
1 tsp 1 dried thyme
½ tsp chilli flakes (optional)
800 g 800 baby potatoes or red-skinned Desiree potatoes, halved
6 6 garlic cloves, smashed
1 1 lemon, cut into quarters
2 Tbsp 2 fresh parsley, chopped (for garnish)
Method
- Preheat oven to 200°C.
- In a large bowl, toss chicken pieces with olive oil, salt, pepper, smoked paprika, oregano, thyme, and chilli flakes.
- Add potatoes and garlic to the bowl, ensuring they are well coated with all seasoning.
- Transfer everything to a large roasting pan, arranging lemon quarters around the chicken and potatoes.
- Roast for 40–45 minutes, flipping chicken and potatoes halfway through, until golden and crispy.
- Garnish with fresh parsley. Serve warm at the table.
