Lemon garlic chicken with roasted potatoes

Ingredients

  • 4 4 chicken drumsticks

  • 2 2 chicken breasts, halved

  • 3 Tbsp 3 olive oil

  • 1 tsp 1 salt

  • ½ tsp black pepper

  • 1 tsp 1 smoked paprika

  • 1 tsp 1 dried oregano

  • 1 tsp 1 dried thyme

  • ½ tsp chilli flakes (optional)

  • 800 g 800 baby potatoes or red-skinned Desiree potatoes, halved

  • 6 6 garlic cloves, smashed

  • 1 1 lemon, cut into quarters

  • 2 Tbsp 2 fresh parsley, chopped (for garnish)

Method

  • Preheat oven to 200°C.
  • In a large bowl, toss chicken pieces with olive oil, salt, pepper, smoked paprika, oregano, thyme, and chilli flakes.
  • Add potatoes and garlic to the bowl, ensuring they are well coated with all seasoning.
  • Transfer everything to a large roasting pan, arranging lemon quarters around the chicken and potatoes.
  • Roast for 40–45 minutes, flipping chicken and potatoes halfway through, until golden and crispy.
  • Garnish with fresh parsley. Serve warm at the table.
