KANZI® apple brioche pudding with caramel sauce

3 3 KANZI® apples, cored, thinly sliced into rounds
250 g 250 pkt brioche buns, split, roughly torn in half
2 cups 2 thickened cream
3 3 free-range eggs
1/2 cup 1/2 brown sugar
40 g 40 unsalted butter, melted
4 4 scoops vanilla ice-cream
1/4 cup 1/4 caramel sauce
Method
- Preheat oven to 160°C fan-forced. Grease a 2cm (5cm deep) round baking dish. Arrange brioche and half of the KANZI® apples in the dish. Whisk cream, eggs and 1/3 cup of the sugar in a jug until combined. Pour over the brioche. Stand for 10 minutes to soak.
- Arrange remaining KANZI® apple over brioche. Combine butter and remaining sugar in a small bowl. Brush KANZI® apple with butter mixture. Bake for 50 minutes, covering with foil if overbrowning, or until golden and set. Stand for 5 minutes.
- Serve topped with ice-cream and drizzled with caramel sauce.
