Japanese Style Grilled Corn on the Cob

4-6 4-6 corn on the cobs
1 tsp 1 wasabi paste
3 Tbsp 3 mayonnaise
Salt
1/2 1/2 Tbsp lemon juice
30 g 30 butter, soft
1 Tbsp 1 sweet chilli sauce
4 Tbsp 4 cream cheese 100g crumbled feta
2 Tbsp 2 Furikake seasoning
Method
- Pull back corn husks, discarding silk, and tie them with string.
- Place wasabi, mayonnaise, pinch of salt and lemon juice into bowl and whisk to combine. Place wasabi mayonnaise in piping bag or into a sealable plastic bag.
- In separate bowl, mix soft butter with sweet chilli sauce until combined.
- Bring griddle to high heat. Once hot, add 1/3 cup of water and place in corn. Cover with foil and let steam for 3 minutes. Turn corn around and steam for further 3 minutes.
- Once water has evaporated, start brushing corn with sweet chilli butter. Turn around every 2 minutes until corn is golden brown and charred.
- Remove from griddle and serve on platter. Spread cream cheese on top, sprinkle crumbled feta, drizzle with wasabi mayonnaise and sprinkle all over with Furikake seasoning.
