Ingredients

  • 2 cups 2 (300g) self-raising flour

  • 1 1 ⁄2 tsp baking powder

  • 1 1 ⁄2 tsp salt

  • 1 1 ⁄4 tsp black pepper

  • 1 cup 1 (250ml) milk

  • 2 2 eggs

  • 1 1 ⁄4 cup (60ml) melted butter

  • 1 1 ⁄2 cup (80g) diced ham

  • 1 cup 1 (120g) grated or diced cheddar cheese

  • 1 1 ⁄4 cup (30g) grated cheese for top

Method

  • Preheat oven to 180°C. Line muffin tin with paper cases or grease.
  • In large bowl, mix flour, baking powder, salt and pepper.
  • In separate bowl, whisk milk, eggs and melted butter.
  • Fold wet ingredients into dry, then stir in ham and cheese.
  • Spoon into muffin tin, sprinkle extra cheese on top and bake for 18-20 minutes.
  • Let cool slightly before serving.
