Ham and Cheddar Cheese Muffins

2 cups 2 (300g) self-raising flour
1 1 ⁄2 tsp baking powder
1 1 ⁄2 tsp salt
1 1 ⁄4 tsp black pepper
1 cup 1 (250ml) milk
2 2 eggs
1 1 ⁄4 cup (60ml) melted butter
1 1 ⁄2 cup (80g) diced ham
1 cup 1 (120g) grated or diced cheddar cheese
1 1 ⁄4 cup (30g) grated cheese for top
Method
- Preheat oven to 180°C. Line muffin tin with paper cases or grease.
- In large bowl, mix flour, baking powder, salt and pepper.
- In separate bowl, whisk milk, eggs and melted butter.
- Fold wet ingredients into dry, then stir in ham and cheese.
- Spoon into muffin tin, sprinkle extra cheese on top and bake for 18-20 minutes.
- Let cool slightly before serving.
