Ingredients

  • 200 g 200 butter

  • 3-4 3-4 garlic cloves

  • 1 tsp 1 crushed chilli

  • 2 Tbsp 2 chopped parsley (extra to serve)

  • 2 Tbsp 2 chopped coriander

  • 1 tsp 1 paprika

  • 1 1 lemon

  • 500 g 500 peeled prawns

  • Olive oil

  • Salt and pepper

Method

  • Preheat barbecue or griddle to high heat.
  • Remove butter from fridge at least 1 hour before prepping to get to room temperature, and soften in bowl.
  • Meanwhile, crush garlic cloves, then add crushed chilli, chopped parsley, chopped coriander, paprika, zest of lemon. Add to butter.
  • Mix well until fully combined then set aside.
  • Place prawns in mixing bowl, drizzle with olive oil and season with salt and pepper.
  • Cook prawns for around 3 minutes on each side over hot grill. Place in frying pan over grill, add butter and toss through with juice of lemon. Season with salt and pepper and serve hot.
  • Garnish with lemon wedges and parsley to serve.
