Grilled Prawns with Chilli

200 g 200 butter
3-4 3-4 garlic cloves
1 tsp 1 crushed chilli
2 Tbsp 2 chopped parsley (extra to serve)
2 Tbsp 2 chopped coriander
1 tsp 1 paprika
1 1 lemon
500 g 500 peeled prawns
Olive oil
Salt and pepper
Method
- Preheat barbecue or griddle to high heat.
- Remove butter from fridge at least 1 hour before prepping to get to room temperature, and soften in bowl.
- Meanwhile, crush garlic cloves, then add crushed chilli, chopped parsley, chopped coriander, paprika, zest of lemon. Add to butter.
- Mix well until fully combined then set aside.
- Place prawns in mixing bowl, drizzle with olive oil and season with salt and pepper.
- Cook prawns for around 3 minutes on each side over hot grill. Place in frying pan over grill, add butter and toss through with juice of lemon. Season with salt and pepper and serve hot.
- Garnish with lemon wedges and parsley to serve.
