1 large 1 pineapple, skin and core removed, cut into 8 wedges
3 3 nectarines, cut into wedges Maple syrup, to drizzle
125 g 125 punnet raspberries
125 g 125 punnet blueberries
1 cup 1 vanilla bean yoghurt
Mint leaves, to garnish
Method
- Thread each pineapple wedge onto a bamboo skewer.
- Heat barbecue grill to medium.
- Place pineapple skewers and nectarines on grill. Cook for 2-3 minutes, turning until lightly charred.
- Arrange on a serving platter and drizzle with maple syrup. Add raspberries, blueberries and vanilla yoghurt. Garnish with mint leaves and serve immediately.
