GRILLED PINEAPPLE AND SUMMER FRUITS

Ingredients

  • 1 large 1 pineapple, skin and core removed, cut into 8 wedges

  • 3 3 nectarines, cut into wedges Maple syrup, to drizzle

  • 125 g 125 punnet raspberries

  • 125 g 125 punnet blueberries

  • 1 cup 1 vanilla bean yoghurt

  • Mint leaves, to garnish

Method

  • Thread each pineapple wedge onto a bamboo skewer.
  • Heat barbecue grill to medium.
  • Place pineapple skewers and nectarines on grill. Cook for 2-3 minutes, turning until lightly charred.
  • Arrange on a serving platter and drizzle with maple syrup. Add raspberries, blueberries and vanilla yoghurt. Garnish with mint leaves and serve immediately.
