Grape Pear and Walnut Salad with Creamy Dressing

Grapes have been cultivated in Australia since the early 19th century, initially for wine production. But over time, the country has become one of the world’s major grape producers Now is a great time – you can buy virtually any variety, from traditional varieties to delicious new choices. They’re all magnificent, so give yourself time to shop the range.
Ingredients
- FOR THE DRESSING
1/4 cup 1/4 Greek yoghurt (or sour cream)
1 Tbsp 1 lemon juice
1 Tbsp 1 honey
1 Tbsp 1 olive oil
- FOR THE SALAD
4 cups 4 mixed greens (lettuce, rocket, or baby spinach)
1 cup 1 green grapes, halved
1 cup 1 black grapes, halved
1 1 pear, thinly sliced
2 stalks 2 celery, thinly sliced
1/2 cup 1/2 walnuts, toasted and roughly chopped
Method
- In a small bowl whisk together yoghurt, lemon juice, honey, olive oil and salt and pepper to tase. Set aside.
- On large serving platter or bowl, layered salad greens, grapes, pear slices and celery. Sprinkle toasted walnuts over top.
- Drizzle creamy dressing over salad just before serving.
- Serve fresh, with an optional sprinkle of crumbled feta for extra indulgence.
