Garlic Prawn, Tomato and Chilli Pizza

20 g 20 large tiger prawns
2 large 2 flatbreads or thin, ready-to-heat pizza bases
1 1 ⁄2 cup Fish in the Family Marinara sauce
120 g 120 Fior di latte or mozzarella cheese, chopped
150 g 150 baby tomatoes or 1 large oxheart tomato,
sliced Chilli flakes, optional
- TO SERVE
Large handful fresh rocket Garlic dip
Basil leaves, optional
Method
- Preheat oven to 200°C. Line two baking trays with baking paper.
- Peel and devein prawns.
- Place flatbreads or pizza bases on paper-lined trays.
- Spread half sauce over each base. Top with cheese, tomatoes and prawns. Sprinkle with chilli flakes, if using.
- Bake in batches, if needed, for 10-12 minutes until cheese is melted and edges of bases are golden.
- To serve, transfer to cutting board. Top with rocket, and small dollops of garlic dip and basil, if using.
