Creamy potato gratin with rosemary

1 kg 1 Low Carb potatoes, thinly sliced (use a mandolin if possible)
300 ml 300 thickened cream
1/2 cup 1/2 milk
2 2 garlic cloves, crushed
1 Tbsp 1 fresh rosemary leaves (or 1 tsp dried rosemary)
Salt and pepper
1 cup 1 grated Gruyère or tasty cheese
Method
- Preheat oven to 180°C. Lightly grease baking dish.
- u0007In jug, combine cream, milk, garlic, rosemary, salt and pepper.
- u0007Layer half potatoes in dish. Pour over half cream mix and sprinkle with cheese. Repeat.
- Cover with foil and bake 40 minutes. Uncover and bake another 20 minutes until golden and bubbling.
- Rest 10 minutes before serving.
