Ingredients

  • 1 kg 1 Low Carb potatoes, thinly sliced (use a mandolin if possible)

  • 300 ml 300 thickened cream

  • 1/2 cup 1/2 milk

  • 2 2 garlic cloves, crushed

  • 1 Tbsp 1 fresh rosemary leaves (or 1 tsp dried rosemary)

  • Salt and pepper

  • 1 cup 1 grated Gruyère or tasty cheese

Method

  • Preheat oven to 180°C. Lightly grease baking dish.
  • u0007In jug, combine cream, milk, garlic, rosemary, salt and pepper.
  • u0007Layer half potatoes in dish. Pour over half cream mix and sprinkle with cheese. Repeat.
  • Cover with foil and bake 40 minutes. Uncover and bake another 20 minutes until golden and bubbling.
  • Rest 10 minutes before serving.

Chef suggests

Stir 1 tsp of Dijon or wholegrain mustard into the cream. This adds a gentle zing and cuts through the richness beautifully.
