Ingredients

  • 2 cups 2 cooked broad beans (also known as fava beans)

  • 2 Tbsp 2 olive oil

  • 1 1 garlic clove, minced

  • Juice of 1 lemon

  • 1/4 cup 1/4 fresh parsley, chopped

  • 1/4 cup 1/4 fresh mint, chopped (optional, but adds a nice touch)

  • Salt and pepper to taste

  • A pinch of ground cumin (optional for extra flavour)

  • 1/4 cup 1/4 tahini (optional for creaminess)

Method

  • Prepare beans. If using dried broad beans, soak overnight and cook until tender. If using frozen, simply thaw and cook until tender. Drain and let cool.
  • In food processor, combine cooked broad beans, olive oil, garlic, lemon juice, parsley and mint (if using). Blend until ingredients are smooth.
  • Taste dip and season with salt, pepper and a pinch of ground cumin if desired. You can also add tahini for extra creaminess.
  • Transfer to serving bowl. Drizzle with olive oil and garnish with additional parsley or mint.
  • Serve with pita bread, crackers or fresh vegetable sticks.
