Broad bean dip

2 cups 2 cooked broad beans (also known as fava beans)
2 Tbsp 2 olive oil
1 1 garlic clove, minced
Juice of 1 lemon
1/4 cup 1/4 fresh parsley, chopped
1/4 cup 1/4 fresh mint, chopped (optional, but adds a nice touch)
Salt and pepper to taste
A pinch of ground cumin (optional for extra flavour)
1/4 cup 1/4 tahini (optional for creaminess)
Method
- Prepare beans. If using dried broad beans, soak overnight and cook until tender. If using frozen, simply thaw and cook until tender. Drain and let cool.
- In food processor, combine cooked broad beans, olive oil, garlic, lemon juice, parsley and mint (if using). Blend until ingredients are smooth.
- Taste dip and season with salt, pepper and a pinch of ground cumin if desired. You can also add tahini for extra creaminess.
- Transfer to serving bowl. Drizzle with olive oil and garnish with additional parsley or mint.
- Serve with pita bread, crackers or fresh vegetable sticks.
