Ingredients

  • 2 cups 2 self-raising flour

  • 1/2 cup 1/2 caster sugar

  • 1/2 tsp 1/2 salt

  • 1 cup 1 fresh or frozen blueberries

  • 2 2 eggs

  • 3/4 cup 3/4 milk

  • 1/2 cup 1/2 vegetable oil or light olive oil

  • 1 tsp 1 vanilla extract

Method

  • Preheat oven to 180°C. Line muffin tin with paper cases or grease.
  • In bowl, mix flour, sugar and salt. Gently stir in blueberries.
  • In another bowl, whisk eggs, milk, oil and vanilla.
  • Fold wet ingredients into dry until just combined.
  • Spoon into muffin tin and bake for 18-22 minutes.
  • Cool slightly and enjoy warm and top with fresh blueberries.
