Blueberry Muffins

2 cups 2 self-raising flour
1/2 cup 1/2 caster sugar
1/2 tsp 1/2 salt
1 cup 1 fresh or frozen blueberries
2 2 eggs
3/4 cup 3/4 milk
1/2 cup 1/2 vegetable oil or light olive oil
1 tsp 1 vanilla extract
Method
- Preheat oven to 180°C. Line muffin tin with paper cases or grease.
- In bowl, mix flour, sugar and salt. Gently stir in blueberries.
- In another bowl, whisk eggs, milk, oil and vanilla.
- Fold wet ingredients into dry until just combined.
- Spoon into muffin tin and bake for 18-22 minutes.
- Cool slightly and enjoy warm and top with fresh blueberries.
