Bacon Egg and Quiche Muffins

6 6 eggs
1/3 cup 1/3 (80ml) milk
1/2 cup 1/2 (80g) diced cooked bacon
1/2 cup 1/2 (60g) grated cheese
1/4 cup 1/4 (30g) chopped chives
Salt and pepper to taste
Method
- Preheat oven to 180°C.
- Line muffin tin with paper cases or grease.
- Whisk eggs and milk.
- Stir in bacon, cheese, chives, salt and pepper.
- Pour into muffin tins and bake for 20-25 minutes.
- Cool slightly before serving. Garnish with a herb or two.
