Ingredients

  • 4 4 Cosmic Crisp® apples

  • Extra virgin olive oil (for frying)

  • BUTTERMILK PANCAKE BATTER
  • 240 g 240 plain flour

  • 25 g 25 sugar

  • 1 1 1⁄2 tsp baking powder

  • 1 1 1⁄2 tsp bicarbonate of soda

  • 1 1 ⁄2 tsp salt 590ml buttermilk 2 large eggs

  • CINNAMON SUGAR
  • 50 g 50 granulated sugar

  • 1 1 1⁄2 tsp ground cinnamon

  • FOR SERVING
  • Greek yoghurt Fresh apple slices

Method

  • Repare pancake batter. In large bowl, whisk together plain flour, sugar, baking powder, bicarbonate of soda and salt.
  • Make well in centre of dry ingredients and pour in buttermilk. Crack eggs into well. Gradually whisk wet ingredients into dry, working outwards. Don’t overmix, some lumps are okay. Let batter sit for 15 minutes. 3. While batter rests, core 4 Cosmic Crisp apples and slice into rings.
  • In small bowl mix together granulated sugar and cinnamon to create your cinnamon sugar. Set aside.
  • Fry apple rings in small amounts of extra virgin olive oil in non-stick pan over medium- low heat. Dip each apple ring into pancake batter, ensuring it’s fully coated. Carefully place battered apple rings in pan and cook until golden brown on each side (about 2–3 minutes per side). Flip gently to avoid batter spilling out. Repeat with remaining apple slices and batter, adding more oil to pan when necessary.
  • Once apple rings are golden and crispy, immediately dip and coat each ring in cinnamon sugar mixture while they’re still warm so sugar sticks to pancakes.
  • Serve apple rings immediately while warm, with a dollop of Greek yoghurt and fresh apple slices on the side!
