Roasted chicken thighs with tomatoes and garlic

minutesYou’ll find this a very simple yet also a very flavourful dish with juicy chicken and caramelised tomatoes giving you an unexpected pleasure to serve up. And it looks so good!
Ingredients
4 4 bone-in, skin-on chicken thighs
Salt and black pepper, to taste
2 Tbsp 2 olive oil
3 cloves 3 garlic, minced
200 g 200 cherry tomatoes, halved
1 tsp 1 dried thyme
1 tsp 1 dried oregano
1 1 ⁄2 cup chicken stock
2 Tbsp 2 Balsamic vinegar
Method
- Preheat oven to 200°C. Season chicken with salt and pepper.
- Heat olive oil in oven-safe pan. Sear chicken thighs skin-side down until golden brown, about 5 minutes.
- Flip chicken, then add garlic, tomatoes, thyme and oregano. Pour in chicken stock and Balsamic vinegar.
- Transfer to oven and roast for 25-30 minutes, or until chicken is cooked through.
- Serve hot with mashed potatoes or crusty bread.
