WATERMELON, MINT AND GOAT CHEESE SALAD

Ingredients

  • 1/2 1/2 red onion, peeled, finely sliced

  • 1 Tbsp 1 freshly squeezed lemon juice

  • 1 tsp 1 salt

  • 1/2 1/2 bunch of fresh mint, leaves only

  • 500 g 500 watermelon, cut into pieces

  • 6 cubes 6 Meredith Dairy

  • Marinated Goat Cheese

  • 2 Tbsp 2 pistachios, roughly chopped

  • Black pepper

Method

  • In a small bowl combine red onion, lemon juice and 1 tsp of salt and leave for 15 minutes.
  • Finely shred large leaves of mint, leaving small ones whole.
  • Gently toss watermelon and Meredith Dairy Marinated Goat Cheese together, add shredded mint leaves, leaving small leaves to decorate. Place on a platter.
  • Drain red onion, discarding lemon juice and scatter with pistachios and reserved mint leaves over the watermelon salad.
  • Season with black pepper and serve.
