Ingredients

  • 1 tsp 1 sea salt

  • 1 tsp 1 ground coriander

  • 1 tsp 1 ground cumin

  • 1 tsp 1 smoked paprika

  • 1/4 tsp 1/4 chilli powder (optional)

  • 1/4 cup 1/4 extra virgin olive oil

  • 1 kg 1 whole green prawns, unpeeled

  • Micro herbs, lemon wedges, and radish and fennel salad, to serve

Method

  • Place salt, spices and olive oil in small bowl and mix well.
  • Skewer prawns from the tail of the prawn to the base of the head.
  • Toss prawns in the spice mixture just before cooking.
  • Heat barbecue grill to medium temperature.
  • Cook prawns until they turn a dark colour and are cooked through.
  • Baste with any leftover spice mixture as prawns are cooking.
  • Serve prawns on or off skewers with a scatter of micro herbs, a few lemon wedges and along with radish and fennel salad on the side.
