SPICE-CRUSTED BARBECUE PRAWNS

1 tsp 1 sea salt
1 tsp 1 ground coriander
1 tsp 1 ground cumin
1 tsp 1 smoked paprika
1/4 tsp 1/4 chilli powder (optional)
1/4 cup 1/4 extra virgin olive oil
1 kg 1 whole green prawns, unpeeled
Micro herbs, lemon wedges, and radish and fennel salad, to serve
Method
- Place salt, spices and olive oil in small bowl and mix well.
- Skewer prawns from the tail of the prawn to the base of the head.
- Toss prawns in the spice mixture just before cooking.
- Heat barbecue grill to medium temperature.
- Cook prawns until they turn a dark colour and are cooked through.
- Baste with any leftover spice mixture as prawns are cooking.
- Serve prawns on or off skewers with a scatter of micro herbs, a few lemon wedges and along with radish and fennel salad on the side.
