SOY AND GINGER OYSTERS

1 1/2 1 1/2 salt-reduced soy sauce
1 1/2 Tbsp 1 1/2 rice wine vinegar
1 tsp 1 finely grated ginger
1/2 tsp 1/2 caster sugar
Shredded green shallot and microgreens (we used Tatsoi), to serve
Method
- To make a dressing, whisk soy sauce, rice wine vinegar, ginger and sugar in a small bowl.
- Drizzle dressing over 8 oysters. Top each with a little shredded green shallot and microgreens.
- Arrange on a serving platter lined with crushed ice and serve.
