Ingredients

  • 180 g 180 unsalted butter, softened

  • 4 4 anchovies

  • 3 sprigs 3 thyme, leaves picked

  • 1 sprig 1 rosemary, leaves picked

  • 6 6 chive sprigs, roughly chopped

  • 1 Tbsp 1 parsley leaves

  • 4 4 x 150g boneless salmon fillets, halved lengthways

  • 1/4 cup 1/4 extra virgin olive oil

  • Salt and pepper, to season

  • Lime juice and wedges and green salad, to serve

Method

  • Place butter, anchovies, thyme, rosemary, chives and parsley into the bowl of a food processor and process until smooth. Cover with cling wrap and refrigerate until ready to serve.
  • Thread each piece of salmon onto a bamboo or metal skewer.
  • Coat salmon with olive oil and season well.
  • Preheat barbecue to medium.
  • Grill salmon for 2-3 minutes each side, turning once, until cooked through, brushing each fillet with part of prepared butter while cooking.
  • Serve salmon topped with remaining anchovy and herb butter. Squeeze over a little lime juice. Serve with wedges and salad.
