
SIMPLE GRILLED SALMON SKEWERS

180 g 180 unsalted butter, softened
4 4 anchovies
3 sprigs 3 thyme, leaves picked
1 sprig 1 rosemary, leaves picked
6 6 chive sprigs, roughly chopped
1 Tbsp 1 parsley leaves
4 4 x 150g boneless salmon fillets, halved lengthways
1/4 cup 1/4 extra virgin olive oil
Salt and pepper, to season
Lime juice and wedges and green salad, to serve
Method
- Place butter, anchovies, thyme, rosemary, chives and parsley into the bowl of a food processor and process until smooth. Cover with cling wrap and refrigerate until ready to serve.
- Thread each piece of salmon onto a bamboo or metal skewer.
- Coat salmon with olive oil and season well.
- Preheat barbecue to medium.
- Grill salmon for 2-3 minutes each side, turning once, until cooked through, brushing each fillet with part of prepared butter while cooking.
- Serve salmon topped with remaining anchovy and herb butter. Squeeze over a little lime juice. Serve with wedges and salad.
