Rustic Vegetable And Lentil Soup With Rocket

Ingredients

  • 2 Tbsp 2 olive oil

  • 2 2 brown onions, finely chopped

  • 4 cloves 4 garlic, minced

  • 1 tsp 1 ground turmeric

  • 1 ½ tsp 1 ½ ground cumin

  • ½ tsp ½ ground fennel

  • 8 8 stalks fresh thyme

  • 2 Tbsp 2 tomato paste

  • 1 ½ L 1 ½ beef or vegetable stock

  • 500 ml 500 water

  • 3 large 3 carrots, peeled and thickly sliced

  • 2 large 2 potatoes, peeled and cut into 3cm pieces

  • 1 cup 1 green or French-style lentils

  • 1 1 bunch rocket, stems trimmed

Method

  • Heat oil in a large pot over a low-medium heat. Add onions and garlic, cook for 10 minutes or until golden brown, stirring occasionally.
  • Add turmeric, cumin and fennel, cook stirring for 1-2 minutes or until spices smell roasted.
  • Add thyme and tomato paste and cook for 1 minute, stirring occasionally.
  • Add stock, water, carrots, potatoes and lentils. Cover with lid and bring to the boil. Gently boil for 25 minutes or until lentils are tender but still hold their shape and vegetables are cooked. Remove thyme stalks. Season with salt and pepper.
  • Add rocket and stir through until wilted. Serve.

Cook's tips...

  • Squeeze over fresh lemon juice before serving to really bring out the flavours in this soup.
  • If you like a more simple flavoured soup, omit the turmeric and cumin, the soup will still taste great. You can add in your favourite vegetables too! Try parsnips or sweet potato.
