Pear Turnovers

3 3 Williams pears
Olive oil
1/2 tsp 1/2 cinnamon
1/4 tsp 1/4 all spice
1 tsp 1 vanilla extract
1/2 cup 1/2 brown sugar
1 Tbsp 1 butter
1 1 lemon
375 g 375 Careme All Butter Spelt or plain flour puff pastry sheet
1 1 egg
Flour to dust
1 1/2 Tbsp 1 1/2 icing sugar
Vanilla ice cream
Method
- Peel the skin off the pears and remove the core. Cut the pears into 1-2cm cubes and place on hot frying pan with a drizzle of olive oil.
- Stir well and cook over medium high heat.
- Add cinnamon, all spice and vanilla extract. Stir and add brown sugar. Cook for 5 minutes and turn down to medium heat.
- Add butter and stir through. Cook with lid on for 10 minutes.
- Grate zest of ½ lemon and squeeze juice of ½ lemon. Cook for further 10 minutes until softened, sticky and caramelised.
- Position pears onto plate or tray. Place into freezer for 5 minutes to cool.
- Meanwhile, roll out pastry sheet. Cut pastry sheet into 6 similar square pieces and place approximately 1 ½ Tbsp of pear mix on each square.
- Whisk egg in a small bowl and brush edges of pastry to stick. Fold one pastry corner to the other to form a triangle and press with fork to seal.
- Dust kitchen bench with flour to prevent from sticking to bench and repeat with rest of pastries.
- Brush tops of turnovers with remaining egg mix and carefully place in basket of air fryer.
- Set air fryer to 195°C for 14 minutes.
- Remove pear turnovers from air fryer, dust with icing sugar. Serve warm and with vanilla ice cream if desired.
