1 kg 1 ripe peaches, peeled, cut intochunks (stones removed)
1/2 cup 1/2 caster sugar
1/4 tsp 1/4 each of ground nutmegand cinnamon
3 tsp 3 cornflour
1 Tbsp 1 lemon juice
30 g 30 butter, cubed
- TOPPING
1 1/2 cups 1 1/2 self-raising flour
1/3 cup 1/3 caster sugar
Pinch of salt
125 g 125 butter, chopped
1/3 cup 1/3 buttermilk
2 tsp 2 vanilla essence
Method
- Preheat oven to 180°C, fan-forced. Grease medium baking dish.
- Place peaches, sugar, spices, cornflour, lemon juice and butter into baking dish. Mix gently to combine. Bake in oven for 15 minutes.
- Meanwhile, make topping. Place flour, sugar and salt into bowl electric mixer bowl. Mix on low until combined.
- Add butter, mix until like large breadcrumbs. Add buttermilk and vanilla and mix until just combined.
- Remove peaches from oven, drop small spoonful’s of topping over peaches. Don’t worry if there are gaps. Bake 40-45 minutes or until golden.
