Ingredients

  • 1 kg 1 ripe peaches, peeled, cut intochunks (stones removed)

  • 1/2 cup 1/2 caster sugar

  • 1/4 tsp 1/4 each of ground nutmegand cinnamon

  • 3 tsp 3 cornflour

  • 1 Tbsp 1 lemon juice

  • 30 g 30 butter, cubed

  • TOPPING
  • 1 1/2 cups 1 1/2 self-raising flour

  • 1/3 cup 1/3 caster sugar

  • Pinch of salt

  • 125 g 125 butter, chopped

  • 1/3 cup 1/3 buttermilk

  • 2 tsp 2 vanilla essence

Method

  • Preheat oven to 180°C, fan-forced. Grease medium baking dish.
  • Place peaches, sugar, spices, cornflour, lemon juice and butter into baking dish. Mix gently to combine. Bake in oven for 15 minutes.
  • Meanwhile, make topping. Place flour, sugar and salt into bowl electric mixer bowl. Mix on low until combined.
  • Add butter, mix until like large breadcrumbs. Add buttermilk and vanilla and mix until just combined.
  • Remove peaches from oven, drop small spoonful’s of topping over peaches. Don’t worry if there are gaps. Bake 40-45 minutes or until golden.
