One-Bowl Spiced Apple Slice

Melted butter, to grease plus 150g extra, chopped, softened
2/3 cup 2/3 brown sugar
1 tsp 1 vanilla extract
Finely grated zest of 1 lemon
1 1 free-range egg, lightly beaten
¼ cup ¼ self-raising flour
1 tsp 1 ground cinnamon
185 ml 185 milk
2 small 2 apples, unpeeled, thinly sliced (we left the core in – you can too!)
2 tsp 2 raw sugar
Icing sugar mixture, to dust
Method
- Preheat oven to 180°C. Grease a 30x20cm lamington tin with melted butter and line base and sides with baking paper.
- Put butter, sugar and vanilla and zest in a large bowl and beat with electric beaters until smooth, pale and creamy. Add egg and beat again.
- Sift in flour and cinnamon, add milk and stir to make a thick batter. Spoon into prepared tin and smooth surface.
- Arrange apple on top in a single layer and sprinkle with raw sugar.
- Bake for 25 minutes or until cooked when tested with a skewer. Set aside in tin for 15 minutes, before removing from tin and cooling on a wire rack. Serve warm, or at room temperature, lightly dusted with icing sugar if desired.
