One-Bowl Spiced Apple Slice

Ingredients

  • Melted butter, to grease plus 150g extra, chopped, softened

  • 2/3 cup 2/3 brown sugar

  • 1 tsp 1 vanilla extract

  • Finely grated zest of 1 lemon

  • 1 1 free-range egg, lightly beaten

  • ¼ cup ¼ self-raising flour

  • 1 tsp 1 ground cinnamon

  • 185 ml 185 milk

  • 2 small 2 apples, unpeeled, thinly sliced (we left the core in – you can too!)

  • 2 tsp 2 raw sugar

  • Icing sugar mixture, to dust

Method

  • Preheat oven to 180°C. Grease a 30x20cm lamington tin with melted butter and line base and sides with baking paper.
  • Put butter, sugar and vanilla and zest in a large bowl and beat with electric beaters until smooth, pale and creamy. Add egg and beat again.
  • Sift in flour and cinnamon, add milk and stir to make a thick batter. Spoon into prepared tin and smooth surface.
  • Arrange apple on top in a single layer and sprinkle with raw sugar.
  • Bake for 25 minutes or until cooked when tested with a skewer. Set aside in tin for 15 minutes, before removing from tin and cooling on a wire rack. Serve warm, or at room temperature, lightly dusted with icing sugar if desired.

Market tip...

For this recipe we used Granny Smiths for their tartness and texture but other varieties will certainly work also. Try Kanzi, Royal Gala or Pink Lady.
