Mango Kefir Parfait

2 cups 2 Babushka’s Mango Kefir
1 packet 1 cream cheese
Savoiardi biscuits or similar
1/4 cup 1/4 caster sugar
1/2 cup 1/2 water
1 can 1 passionfruit pulp
Fresh seasonal fruit
Method
- 1. Make passionfruit syrup
- Combine caster sugar, passionfruit pulp and water in small pan. Bring to boil until sugar is completely dissolved and mixture thickens slightly. Cool syrup.
- 2. Make kefir mixture
- Beat softened cream cheese until smooth. Add kefir and whisk until combined and smooth (you can add a spoon of sugar for a sweeter mixture)
- Note – you can use Babushka’s Vanilla or Coconut Kefir instead of mango and add flavours such as vanilla essence or lime juice to the mixture. I used mango kefir because mangoes are in season.
- 3. Assemble
- Crumble or cut biscuits into pieces and place at bottom of serving dish.
- Spoon passionfruit syrup over the biscuits until moist
- Layer cut up fruit over the biscuit layer
- Spoon kefir mixture over the fruit.
- Repeat layers, finishing with a layer of fruit.
- Refrigerate for 2 to 3 hours to allow mixture to set. Can be kept overnight. Not suitable for freezing.
