Step 1
Lay lobster belly down and press with hands to flatten.
Step 2
Insert a large knife into head, behind eyes with blade facing tail.
Step 3
Lay lobster belly down and press with hands to cut down length of lobster through shell.
Step 4
Turn lobster on its back and cut the underside of the head in half using kitchen shears.
Step 5
Lay lobster belly down and press with hands to prise it open and remove the soft green or yellow paste from in the head. Rinse with cold water.
