Step 1
Wash squid thoroughly and gently pull tentacles and head away from hood in one piece. Remove clear quill and rinse hood.
Step 2
Cut tentacles from the head, just below the eyes, and remove beak.
Step 3
Remove purple skin membrane from the squid.
Step 4
Cut hood lengthways and prise open. Score a honeycomb pattern at 5mm intervals into the inner side of the hood.
