Ingredients

  • 120 g 120 baby salad leaves

  • 2 2 Lebanese cucumbers, cut into ribbons

  • 250 g 250 punnet cherry tomatoes, halved

  • 1 1 yellow capsicum, cut into short strips

  • 1 small 1 red onion, halved, thinly sliced

  • 200 g 200 Greek-style feta cheese, cut into 2cm cubes

  • 150 g 150 pitted, mixed marinated olives

  • DRESSING
  • 1/3 cup 1/3 ⅓ cup extra virgin olive oil

  • 2 tbsp 2 red wine vinegar

  • dried oregano

  • 1/2 tsp 1/2 Dijon mustard

  • 1 small 1 clove garlic, crushed

Method

  • To make dressing, combine oil, vinegar, oregano, mustard and garlic in a screw-top jar. Shake well. Season to taste with salt and pepper.
  • Combine salad leaves, cucumber, tomatoes, capsicum, onion, feta and olives in a large bowl. Just before serving, shake dressing again, then pour over.
