
GOLDEN CHERRY OAT CRUMBLE

800 g 800 fresh cherries, pitted
2 Tbsp 2 lemon juice
1/2 cup 1/2 caster sugar
1 1/2 Tbsp 1 1/2 cornflour Dollop cream or vanilla ice-cream, to serve
- CRUMBLE
3/4 cup 3/4 plain flour
3/4 cup 3/4 rolled oats
1/2 1/2 caster sugar
1/2 tsp 1/2 ground cinnamon
100 g 100 unsalted butter, chopped
Method
- Preheat oven to 180°C fan-forced.
- Toss cherries in a large bowl with lemon juice, sugar and cornflour until well coated. Transfer mixture to a 26cm round ovenproof pie dish (about 4cm deep).
- To make crumble, combine flour, oats, sugar and cinnamon in a large bowl. Rub in butter with fingertips until mixture resembles coarse breadcrumbs.
- Sprinkle crumble over cherries. Bake for 30-35 minutes, until crumble is golden. Serve with cream or ice-cream.
