Ingredients

  • 800 g 800 fresh cherries, pitted

  • 2 Tbsp 2 lemon juice

  • 1/2 cup 1/2 caster sugar

  • 1 1/2 Tbsp 1 1/2 cornflour Dollop cream or vanilla ice-cream, to serve

  • CRUMBLE
  • 3/4 cup 3/4 plain flour

  • 3/4 cup 3/4 rolled oats

  • 1/2 1/2 caster sugar

  • 1/2 tsp 1/2 ground cinnamon

  • 100 g 100 unsalted butter, chopped

Method

  • Preheat oven to 180°C fan-forced.
  • Toss cherries in a large bowl with lemon juice, sugar and cornflour until well coated. Transfer mixture to a 26cm round ovenproof pie dish (about 4cm deep).
  • To make crumble, combine flour, oats, sugar and cinnamon in a large bowl. Rub in butter with fingertips until mixture resembles coarse breadcrumbs.
  • Sprinkle crumble over cherries. Bake for 30-35 minutes, until crumble is golden. Serve with cream or ice-cream.
