Ingredients

  • Cooking oil spray, for greasing

  • 2 2 oranges

  • 5 5 extra large free-range eggs

  • ¼ cup ¼ caster sugar

  • 250 g 250 almond meal

  • 125 ml 125 extra virgin olive oil

  • ½ cup ½ Dutch cocoa

  • 1 tsp 1 gluten-free baking powder

  • Oven-baked oranges to garnish (see recipe here)

  • Toasted flaked almonds and double cream, to serve

Method

  • Preheat oven to 170°C. Grease a 22cm round springform cake tin with cooking oil and line base and side with baking paper.
  • Finely grate the zest of the oranges into a large bowl.
  • Slice off the rind and pith from oranges, then slice into quarters and remove any seeds. Transfer to a blender and process until pureed. Pour into the bowl with the zest.
  • Add eggs, caster sugar, almond meal and olive oil. Whisk to combine. Sift in cocoa and baking powder, then mix until well combined. Pour mixture into prepared tin. Smooth surface.
  • Bake for 1 hour. Set aside in tin until cooled completely.
  • Remove cake from tin and transfer to a serving platter or cake stand. Decorate the cake with slices of Oven-Baked Oranges with bay leaves and cinnamon quills. Serve with a scattering of almonds and a generous dollop of double cream.
