Flourless Orange And Chocolate Cake

Cooking oil spray, for greasing
2 2 oranges
5 5 extra large free-range eggs
¼ cup ¼ caster sugar
250 g 250 almond meal
125 ml 125 extra virgin olive oil
½ cup ½ Dutch cocoa
1 tsp 1 gluten-free baking powder
Oven-baked oranges to garnish (see recipe here)
Toasted flaked almonds and double cream, to serve
Method
- Preheat oven to 170°C. Grease a 22cm round springform cake tin with cooking oil and line base and side with baking paper.
- Finely grate the zest of the oranges into a large bowl.
- Slice off the rind and pith from oranges, then slice into quarters and remove any seeds. Transfer to a blender and process until pureed. Pour into the bowl with the zest.
- Add eggs, caster sugar, almond meal and olive oil. Whisk to combine. Sift in cocoa and baking powder, then mix until well combined. Pour mixture into prepared tin. Smooth surface.
- Bake for 1 hour. Set aside in tin until cooled completely.
- Remove cake from tin and transfer to a serving platter or cake stand. Decorate the cake with slices of Oven-Baked Oranges with bay leaves and cinnamon quills. Serve with a scattering of almonds and a generous dollop of double cream.
