Ingredients

  • 500 g 500 dried spaghetti

  • 500 g 500 pork and beef bolognese mix mince

  • 450 g 450 jar chilled roasted tomato sauce

  • ¼ ¼ cup homemade-style pesto

  • 100 g 100 pecorino cheese

  • From your pantry
  • Olive oil

Method

  • Bring a large pot of salted water to the boil. Add spaghetti and cook for 11 minutes, or as directed on packet instructions. Meanwhile, heat a little olive oil in a large pan over high heat. Add mince and cook for about 5 minutes, breaking it up with a wooden spoon until well seared and golden brown.
  • Add ¼ cup water to jar, stir, then add to the pan. Bring to the boil and reduce heat to low. Cook for further 5 minutes, stirring occasionally.
  • Drain pasta and place it back in the pot, off the heat. Add pesto and toss well.
  • Serve pesto pasta topped with bolognese sauce and a little freshly grated pecorino over the top.

Market tips...

You can either grate the pecorino with a grater, or create shavings using a potato peeler.

Garnish with fresh basil leaves for extra flavour and a burst of colour.
