Falafel With Pomegranate Roast Pumpkin
Method
- Toss pumpkin wedges with a little Harris Farm Markets Pomegranate Balsamic Vinegar, season and roast until golden and tender.
- Meanwhile, microwave or pan-fry sesame falafel until warmed through.
- Serve on a bed of Harris Farm Markets Imperfect Picks Smoky Eggplant & Yoghurt Dip, with watercress, mint leaves, ground sumac, extra virgin olive oil and an extra drizzle of pomegranate balsamic vinegar.
- Serve with flat bread on the side.
