250 g 250 prawns, shelled and deveined, chopped
1 tsp 1 AYAM™ Pure Sesame Oil
1 clove 1 garlic, finely grated
1 1 cm knob ginger, finely grated
1 large 1 red chilli, deseeded and finely chopped
1/2 1/2 avocado, pit removed, diced
1/4 1/4 bunch coriander, washed, finely chopped, with stems
1/4 1/4 bunch mint, chopped
4 4 iceberg lettuce leaves, as cups
1 Tbsp 1 AYAM™ Light Soy Sauce
2 Tbsp 2 raw cashews, roughly chopped
1 1 lime, cut into wedges
Method
- Marinate prawns in a bowl with sesame oil, garlic, ginger and chilli. In a large pan, cook prawns for about 5 minutes. Leave to cool.
- Once cooled, roughly chop and place in a large bowl with avocado, coriander and mint, and mix through.
- Serve a couple of spoonfuls of prawn mixture in lettuce cup topped with soy sauce, cashews and a squeeze of lime.
