Ingredients

  • 4 4 raw blue swimmer crabs, cleaned (quartered by our fishmongers) – can swap seafood to raw prawns, scampi or bugs

  • 2 Tbsp 2 peanut or vegetable oil

  • 4 4 garlic cloves, crushed

  • 3 tsp 3 finely grated fresh ginger

  • 1 1/2 1 1/2 – 2 Tbsp sambal oelek* (to your taste)

  • 1 cup 1 tomato passata/purée

  • 2 Tbsp 2 salt-reduced soy sauce

  • 1/3 cup 1/3 Chinese cooking wine

  • 3 3 green onions (shallots), trimmed and sliced diagonally

Method

  • Lightly crack the very large crab claws and set aside.
  • Heat oil in a large wok over medium-high heat until hot.
  • Add garlic, ginger and sambal oelek. Stir-fry for 1 minute or until fragrant. Add tomato passata, soy sauce and Chinese cooking wine. Cover and cook for 1-2 minutes until boiling.
  • Add crab and stir-fry for 2 minutes. Cover and cook for 2 minutes. Repeat covering and stir-frying until crab meat is cooked through and shells turn pink. Toss through green onions and serve.
