Tender Chicken in Honey & Turmeric Kefir

Ingredients

  • 1.2 kg 1.2 Chicken breast

  • Marinade:
  • 400 ml 400 Babushka’s honey and turmeric kefir

  • 1 teaspoon 1 ginger, minced

  • 2 cloves 2 garlic, minced

  • 1/4 teaspoon 1/4 cayenne pepper

  • 1 teaspoon 1 ground cumin

  • 1 teaspoon 1 salt

  • 1 tablespoon 1 olive oil

  • 1/4 cup 1/4 coriander, chopped finely

  • Other:
  • salt and pepper to taste

  • salad greens

  • cherry tomatoes

  • parsley to garnish

Method

  • Mix marinade ingredients together in a bowl
  • Add chicken and leave to marinade 2-8 hours. The acids and enzymes in kefir will tenderise your chicken, leaving it beautifully soft after marinating
  • Heat vegetable oil over medium-high heat in a skillet
  • Once hot, add chicken pieces to the skillet. Cook 3 breast fillets at a time to avoid over-crowding your skillet and ensuring heat is even.
  • Cook chicken in skillet for 5-7 minutes on each side, depending on thickness of the breast fillets.
  • Leave chicken to rest for 5 minutes
  • Season with salt and pepper, garnish with parsley and enjoy on a bed of salad or with roast veggies.
