BBQ Rubs And Marinades

These zingy flavour boosters will make your dishes sing! They work beautifully with poultry, beef, lamb, pork or fish

Asian-style Marinade

2 sticks lemongrass, sliced 
8 kaffir lime leaves, finely sliced
3 cloves garlic, crushed
3 Tbsp soy sauce
1 tsp fish sauce
1 piece ginger (5cm), peeled and chopped
Juice of 3 limes
1 red chilli, seeds removed, finely chopped
150ml olive oil

1. Place all ingredients in a bowl and marinate your meat, poultry or fish, tossing to coat. 

Mediterranean Marinade

6 cloves garlic, crushed
¾ cup olive oil
Juice and finely grated zest of 2 lemons
4 sprigs rosemary, finely chopped
Salt and pepper, to season

1. Combine all ingredients in a bowl and mix well. Add to your meat, poultry or fish, tossing to coat.

Chilli Spice Rub

2 tsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp garlic powder
1 tsp sea salt flakes
1 tsp ground black pepper
½ tsp smoked paprika
¼ cup olive oil

1. Place all ingredients in a bowl and mix well. Rub over meat, poultry or fish before grilling.

BBQ Spice Mix

2 Tbsp cumin seeds
2 Tbsp coriander seeds
2 Tbsp fennel seeds
1 Tbsp black peppercorns
1 cinnamon stick

1. Place all ingredients in a frypan on medium heat until fragrant.
2. Either blend in a food processor or crush in a mortar and pestle until spices are ground. Don’t worry if they aren’t fully crushed into a powder.
3. Rub over meat, poultry or fish before grilling.

Fennel And Garlic Spice Rub

5 Tbsp fennel seeds
3 cloves garlic
Salt and pepper, to season

1. Place all ingredients into a blender and blitz until smooth.
2. Rub onto any meat, poultry or fish before grilling.
