Bacon and Egg Roll

Olive oil
300 g 300 bacon (Black Forest)
3 Tbsp 3 mayonnaise
1 Tbsp 1 horseradish paste
1/2 Tbsp 1/2 seeded mustard
Salt and pepper
4 4 eggs
1 1 baby cos lettuce
1 1 avocado
4 4 Nonna Panini Di Casa
2 Tbsp 2 butter
2 Tbsp 2 Danish feta cheese
4 Tbsp 4 barbecue sauce
Method
- Preheat oven to 180°C.
- Bring large frying pan to high heat. Drizzle with olive oil and add bacon. Cook for 1-2 minutes on each side until golden brown and crispy. Remove from pan and place on tray.
- Add mayonnaise, horseradish paste, mustard, salt and pepper in mixing bowl and whisk until combined. Set aside.
- Fry eggs in frying pan with drizzle of olive oil on medium-high heat until bottom of egg is golden and crispy.
- Pick lettuce leaves, wash, set aside.
- Finely slice avocado.
- Slice bread in half, spread with butter, and toast on frying pan for approximately 2 minutes until golden.
- Warm up bread rolls and bacon in oven before serving.
- Spread generous amount of horseradish and mayonnaise and assemble bread rolls with crispy bacon, lettuce, avocado, egg, crumbled feta cheese and barbecue sauce.
