Ingredients

  • 1 kg 1 ripe kiwifruit, peeled and chopped

  • 500 g 500 sugar

  • Juice of 2 lemons

Method

  • In large saucepan combine chopped kiwifruit, sugar and lemon juice.
  • Cook over medium heat, stirring frequently until sugar dissolves.
  • Once sugar has dissolved, increase heat to medium-high and bring mixture to boil.
  • Reduce heat and let simmer, stirring occasionally, until jam thickens (about 30 minutes).
  • Remove from heat and let cool.
  • Transfer jam into sterilised jars and seal tightly. Refrigerate once cooled.
